今回はブロッコリーの下処理とピューレ(大人用と離乳食用)にする方法を分けてご紹介します。
野菜が好きな方や離乳食でブロッコリーを使用したい方は必ず役に立つので是非参考にして下さい。
それでは早速作っていきましょう。
まずブロッコリーは必要な分だけ茎から外す。
茎から外したらたっぷりの水に浸し
キッチンペーパーで落とし紙をしながら20分水に漬ける。
水に漬けることで中にいる虫や汚れが落ちシャキッと復活します。
落とし紙をする理由はブロッコリーは水に浮いてしまうためはみ出た部分まで水に漬ける為です。

20分経ったら軽くすすいで水気を切り食べやすい大きさに切ってい来ます。
ブロッコリーは普通に包丁で切ってしまうとつぼみ部分がボロボロになってしまいます。
そうならない為に写真のように途中まで刃を入れ、
裂けるチーズのように引き裂くと、、、、
つぼみがボロボロにならず綺麗にカットが出来ます。
（無駄も出ないし掃除が楽)
食べやすい大きさに切ると書きましたが、どちらかというと全て同じ大きさにすると良いです。
その理由は茹でた時に全て同じ茹で加減になるからです。
大きな物だけ固いなんてことがよくあるのでサイズ合わせは大切です。
次は茹で方を見ていきましょう。
カットが終わったらブロッコリーを茹でていきます。
沸騰したお湯にブロッコリーを入れて2分〜4分タイマーをかける。
大人の場合は500mlの水に対して小さじ1、1リットルなら小さじ2の塩を入れて茹でましょう。
塩を入れると下味が付き1億倍美味しくなます。
離乳食用は必ず塩を入れずに５分間茹でて下さい。

大人用の茹で時間は正直好みになりますが最低でも2分は茹でた方が美味しく食べられます。
僕は2分30秒が好みです。(青臭さもなく柔らかすぎないので)
そしてタイマーが鳴ったら光の速さでたっぷりの氷水に漬ける。
（氷水を入れたボウルにザルをかましてから冷やすと後で水を捨てる時が楽です。)
氷水に入れたら5分間よく冷やす。
冷やす理由は主に３つあります。
食材はお湯から取り出したあとに自身の予熱でどんどん火が入ってしまい予定より柔らかくなってしまいます。
なので氷水で冷やし予熱による過度な加熱を阻止するって理屈です。
②変色を防止する。
基本的に緑色の野菜は熱を加えると発色が良くなり、加熱時間が長いほど黒く変色します。
発色が良いうちに強制的に冷やして変色を防止します。
③傷み防止
食材はほんのり温かい時間が長いほど菌が繁殖します。
それを氷水で冷やすことで菌の繁殖を防止します。
5分間よく冷やしたら水気を切り、湯で方についてはこれで終わりです。
ここからは離乳食&ピューレの作り方を書いていきます。
ブロッコリーを少し細かくし（茎もつぼみも全て)少量の水とハンドブレンダーにかける。
離乳食用のみですが、小房の部分は完全なペーストにしないと子供にとっては繊維があり固いのでハンドレンダーが無い方はつぼみと小房に分けてつぼみ部分のみすり鉢などですり潰して水を足して調節してください。
残った小房は大人が食べましょう。
離乳食では小房は固いためつぼみ部分のみを食べさせるのが基本ですが、ハンドブレンダーがあれば小房も完全なペーストにできます。
なのでうちではブレンダーでまわして娘(5ヶ月)に食べさせています。
そしてブロッコリーをハンドブレンダーにかけたらピューレの完成。

ちなみにブロッコリーはつぼみより小房の部分に甘味と味があるのでブレンダーで回した方が絶対に美味しいです。
何より濾したり潰したりしないので洗い物も少なく済み、めちゃくちゃ一瞬で作れます。(多分30秒かからない)
ピューレはそのまま冷凍も可能ですし、牛乳と塩を加えれば美味しいスープも出来上がるので非常に便利です。
ピューレの活用レシピはそのうちアップします。
ちなみに断然おすすめなのはブラウンのブレンダー（この型)です。安物と違い繊維が残りません。
